how to make pasta in home
But making pasta from scratch is quite a fun thing to do. And here's a very simple recipe on how to make fresh egg pasta.
### Ingredients
For the Pasta
2 cups all-purpose flour (plus extra for dusting)
3 large eggs
A pinch of salt
### Instructions
#### 1. Prepare the Dough
1. Sift and Flour; Make well in flour Pile your flour out on a clean surface and create a well in the middle. Place eggs and salt into well.
2. Mix: Stir egg lightly with fork. Add, gradually from sides of well, flour to form shaggy dough.
3. Sfregatura: Put together tritura and knead the dough in hand for about 8-10 min until smooth and elastic. If too tacky add a little more flour.
4. Riposo: Overlap plastic or wrap with towel over the dough. Let rise for at least 30 min.
#### 2. Punch out the pasta
1. Cut dough into quarters: Cut the dough into four for you to be able to handle them.
2. Flatten one sheet of dough: Take one and flatten it just a little bit. Cover them because they dry fast.
3. Roll: Roll out dough to the desired thickness using flour dusting where necessary to keep it from sticking. If using a pasta machine, start with the largest setting and step down through the increments to the thinner settings.
4. **Roll out the dough, then cut the pasta:** Using a sharp knife or pasta cutter, cut your pasta shape as for fettuccine or tagliatelle.
Prepare the Pasta
1. **Boil Water**: Bring to a boil salted water in a large pot.
2. **Cook:** Put the fresh pasta into boiling water and cook for about 2-4 minutes depending on the thickness of your pasta. Fresh pasta cooks much quicker than the dried, old-fashioned stuff.
3. **Drain:** If you're making a sauce, you can use the pasta water to preserve it; otherwise, you should drain the pasta based on your requirement.
Step 4: Serve
And voilà! Cook up your pasta and add your favorite sauce, and you are ready to go! Fresh pasta is always best served with simple sauces: olive oil and garlic, marinara, or creamy Alfredo. Bon appétit!
